Brunos Restaurant at The Centurion Hotel is introducing refined Italian elements to its menu — a thoughtful tribute to the heritage behind its name and the enduring Legacy journey it represents.
Named after Bruno Corte, one of the founders of Legacy Hotels Resorts, the restaurant has long been a familiar and welcoming dining destination at The Centurion Hotel for years. The introduction of Italian-inspired dishes pays homage to Corte’s roots and celebrates the spirit of passion, hospitality, and authenticity that helped shape the Legacy brand. While Brunos continues to offer its well-loved favourites and versatile dining options, guests can now enjoy a selection of beautifully crafted Italian classics woven into the menu.

Signature additions include sautéed chicken livers in a creamy tomato, roasted garlic and pepperoncini sauce served with toasted ciabatta; a rich Carbonara with crispy bacon, black pepper and a silky parmesan egg emulsion; and Chicken Parmigiano — parmesan-crumbed chicken fillet grilled with napolitana sauce, mozzarella, and fresh basil. For a sweet finish, traditional Italian gelato in vanilla, chocolate, and pistachio brings a touch of authentic indulgence.

A generous buffet breakfast is served from 06h30 to 10h30, followed by a relaxed lounge and bar menu from 11h00 to 18h00, ideal for light meals and informal meetings. The à la carte lunch and dinner menu, available from 12h30 to 22h00, continues to feature a range of grills, pizzas, pastas and contemporary mains, alongside vegetarian and gluten-free options to ensure an inclusive dining experience.
